Amazing Mexican-Inspired Breakfast Ideas

Mexican food is so vibrant and full of lots of colors and flavors. We’re all used to having dishes like nachos or fajitas, but Mexican breakfast dishes are less common. That’s a real shame because there are some incredible recipes for delicious Mexican breakfasts that are unlike anything you would normally have.

Breakfast is one of those tricky meals that often becomes boring. We get stuck into a routine of eating the same thing over and over because breakfast feels more like a functional meal instead of one to be enjoyed. However, if you want to do something a bit more special with your breakfast, why not try one of these amazing Mexican recipes?

Breakfast Burritos

Breakfast burritos are one that you are probably familiar with already. Taking the concept of a burrito and then filling it with whatever breakfast foods you like is a great way to start the day and you have so much flexibility. If you want something delicious and decadent then you can fill it with eggs, sausages, and plenty of cheese. But if you are trying to eat a healthy breakfast that will set you up for the day, why not go for black beans and avocado instead? The more you experiment, the better recipes you will find. There are plenty online but you can also create your own with whatever you like.

Chilaquiles

Chilaquiles are a more traditional Mexican dish that is often eaten for breakfast but can be eaten for lunch or dinner too. It’s a simple dish usually made from leftover tortillas (but you can use fresh ones), salsa, cheese, and whatever toppings you like. The tortillas are put in with the salsa and some broth before being topped with cheese and put in the oven, so this is more like a casserole style dish as opposed to the nachos that you are used to. Once it has cooked, you can then top it with anything you like, but eggs work great if you are having it for breakfast. You can use this chilaquiles recipe as a basis to learn the method, but once you’ve made it a few times, you can start experimenting with different toppings. Just like breakfast burritos, the possibilities really are endless here.

Huevos Rancheros

Huevos Rancheros is a simple Mexican egg recipe that is packed full of healthy foods and delicious, authentic flavors. The eggs are topped with cheese and sit on top of a crispy tostada with black beans. You can also add other toppings, like salsa or guacamole if you like, and plenty of hot sauce. It’s a delicious take on a classic fried egg breakfast that we are all familiar with, and there are all sorts of ways you can modify the recipe and make it your own.

Breakfast Quesadillas

A quesadilla is a tortilla that is filled, folded in half, and then fried on each side to give it a nice crisp. They are a staple of Mexican cuisine and usually, they’re filled with beef or chicken, but that may be a little heavy for a breakfast meal. You can, however, create a delicious breakfast version if you use avocado and salsa instead. Black beans and eggs with a bit of cheese also work brilliantly in a quesadilla for breakfast. If you do want a protein-packed breakfast, you can still add some chicken if you like. Many people use sausage, bacon or ham in their breakfast quesadillas too. Breakfast Nachos

This is another great variation on a Mexican favorite. Everybody is familiar with nachos using classic toppings like salsa, guacamole, ground beef, refried beans and cheese. But you can turn it into a delicious breakfast meal if you swap out some of the toppings. Instead of ground beef, why not use some delicious Chorizo sausage instead? You can add some eggs on there too, and maybe some bacon. The salsa and guacamole are great for cutting through the richness, especially if you have lots of heavy meat and cheese toppings. Breakfast nachos are the ideal family breakfast because everybody can dig in and share, which kids love. It’s also a very easy dish to put together because you just need to load up the toppings and get it in the oven to bake.
